The phrase 'natural wine legend' is sometimes overused, but the moniker certainly applies to Jean-Pierre Robinot. Having founded the famous Paris wine bar L’Ange Vin and France’s premier Natural Wine journal Le Rouge et le Blanc, he now makes incredible wine in the Loire across two appellations, Jasnières and the Coteaux-du-Loir. Farming is biodynamic, vinification is slow and patient but always worth the wait. 

Bistrologie is Chenin Blanc from forty year old vines, given a direct press straight to barrel, where it fermented and rested on lees for fifteen months. This is incredibly lively, with an intense, stony minerality and a refreshing, green apple acidity. As with all Robinot white wines, there are also fino sherry aromas of almonds, bruised apples and souk spices. It makes for a formidable apéritif, but is also fabulous with everything from oysters to white meat.
