Renaud Bruyère and Adeline Houillon have a tiny domaine of just 4.5 hectares in the village of Pupillin, gaining a reputation for some pure and memorable expressions of Chardonnay, Savagnin and Poulsard which they make along biodynamic principles.

From the 'année de terrible gel' or year of the terrible frosts, AKA 2017, this is a rare skin contact Savagnin, and came from a yield of only 6 hectolitres per hectare when a yield of between 20 and 50 hectolitres would be closer to the norm. The grapes were macerated for one month in a stainless steel tank before being pressed and moved to old barrels supplied by Etienne Thiebaud of Domaine des Cavarodes. The wine was then left to mature for 2 years and was topped up (ouillé) each time the level in the barrel dropped too far.
